Overripe

Commonly used in wine tasting notes, this descriptor refers to a wine that usually has been made from grapes that have remained on the vine too long before being picked.

Such grapes are generally high in sugar and low in Acid.

In some wines, grapes such as Merlot, Zinfandel, or/and Shiraz where slightly overripe grapes can be desirable and appeal to some wine drinkers who prefers such styles.

However, for example; A Chardonnay made with heavy intent, however, can be Heavy and out of Balance. See also Pruney.
