It is known for being a light-bodied wine with crisp, refreshing, fruit flavors. Suggested food pairings for Albarino wines include Fried Shrimp or Oysters and Sushi and Sushami (light fish).

Albarino is planted mainly in the Rias Baixas DO in Spain. Weather conditions in the Rias Baixes is generally cool, windy and rainy. Vines must be trained high and open to allow winds to dry them out and avoid the ongoing threat of rot, mildew and other fungal diseases.

The grape is noted for its distinctive aroma, very similar to that of Viognier and Gewurztraminer, suggesting apricot and peach. The wine produced is unusually light, and generally high in acidity with alcohol levels of 12-12.5%. Its thick skins and large number of pips can cause residual bitterness.
